I do LOVE Longtails

If you’re going to eat them, make sure you bleed them straight away, and if possible, Ikejime them and carry enough ice for a slurry

Other than being a great sportfish, Longtails are an underrated eating fish in my opinion. If you’re planning on eating them, make sure to carry enough ice to keep them covered in a slurry, and make sure to bleed them correctly and Iki-Jime them as well 😉

I generally prepare the shoulder pieces, but I’ve recently started using the belly flaps too. I cut the meat into fish finder-sized strips.

I dip the strips into soy sauce, then press sesame seeds or panko crumbs into the meat, before shallow frying them in peanut or canola oil as you want it hot 😉

Katina makes a tasty Thai salad to go with it along with a few chips – and there you have it – Yummo
